How to Fry Eggs in Seasoned Iron

 

Egg Sticking: Eggs often stick when cooked at high heat or for too long. While the pan is young, you may need to use a generous amount of butter or oil and cook the eggs over low heat. Gently scrape around the pan to prevent sticking and burning.

Step 1: Thoroughly preheat the pan without oil.

Step 2: Add the fat, then give it a few seconds.

Step 3: Add the eggs (ideally at room temp) and then turn the heat all the way down

TIPS:

Scrambled: Once your pan is hot, pour in your egg mix, start moving the eggs with a metal spatula, gently stir the eggs using long, sweeping motions. Continue stirring slowly and consistently. As you stir, the eggs will start to form large curds. Ensure that the spatula reaches every corner of the pan to prevent any areas from becoming overcooked.

Fried: Once your pan is hot, crack the egg/s into a small bowl. Add preferred fat/oil to your iron pan and swirl it around to evenly coat the cooking surface. Gently pour the egg into the pan.

For sunny side up, cook the egg for 2 minutes or to your liking.

For eggs over easy, cook the egg for 2 minutes or to your liking, use a spatula to flip the egg and cook for 30 seconds to a minute. Helpful hint: With one hand, tilt the pan upward to assist the egg in sliding onto the spatula.
